Plum Cake

Yum! What to bake this weekend … (especially if you’re in the southern hemisphere).

The days are slowly getting shorter here in Sydney and there can be a chill in the air. Plums are in abundance and you might be wondering what to do with them. May this cake satisfy you, warm up your heart and get you ready for winter.
Enjoy deliciously whilst still a little warm with a cup of tea.



1 cup almond meal
½ cup maize flour
½ cup brown rice flour
1 tsp bi-carb
1/3 cup coconut sugar
Pinch sea salt
Zest of 3 lemons

¼ cup ground linseeds soaked in 1 cup rice milk for 30min
1/3 cup coconut oil
Juice of 1 lemon – about ¼ cup
1 tbsp vanilla extract

4-5 plums thinly sliced into half moons
2 tbsp coconut sugar to sprinkle on top of plums

Preheat oven to 200C.
Use 1 medium size round cake tin
Mix your dry ingredients into your wet ones. Pour batter into a lined cake tin and cover the top with plums. You can make a spiral for a visually appealing effect. Sprinkle the sugar on top and bake for 45-55min (depends on your oven), or until the top goes a little brown and a knife inserted in the middle comes out clean. Let cool a little before cutting. Enjoy!

Tip: If plums are out of season try using other fruit such as apples, nectarines, peaches, or even berries.
